My eldest won’t eat cauliflower or broccoli and my youngest has recently taken a disliking to it too, so I wanted to try and do a recipe where I could convince them both to eat it and so I made these yummy little bites, that to my joy were eaten by both. I have to admit to enjoying a couple of them too.
Cauliflower Cheese Bites
Makes approx 16 bites
Ingredients
- half a head of cauliflower
- pinch of nutmeg
- 40g of parmesan
- 60g of cheddar
- 1 egg
- black pepper
Directions
Place the cauliflower in a steamer and steam until softened.
Add to a bowl and mash with a fork until you have small grains of cauliflower. Set aside and allow to cool.
Preheat oven to 200c or 400f
Add the cheese, pinch of nutmeg and pinch of black pepper and egg and mix to evenly combine.
Grease a baking tray with some oil and then form the mixture into little bite sized shapes, place on the baking tray and then brush lightly over the top with a little more oil.
Place in the oven and bake until golden on both sides (approx 30-40 mins – you will need to carefully flip them half way through baking time).

Hi Isabele, I am not quite sure why the recipe hasnt worked for some. I can only at a guess say it could be either too much water absorbed into the cauliflower or it was a larger head of cauliflower that was use compared to mine. I will get some made again soon and put exact weight for the cauliflower and hopefully it will be more successful for those who have had trouble getting it to hold together.

Did you steam the Cauliflower in a steamer above water and not placed directly into water, as it can absorb a lot of liquid otherwise?
The only thing I can think of is that the cauliflower was too wet so didn’t hold together, or try reducing the ratio of cauliflower if using a large head, as the one I used was medium sized. Hope that helps.

Great Recipe. Thanks. Mine are in the oven now. I added just a pinch (1/2 tsp) of coconut flour, because they seemed a bit wet. Let’s see if they pass the fussy 14 month old test!

the mixture is pretty wet, before baking, but once baked they firm up.

Made these today and they are so yummy, I’m not sure there’ll be any left for the baby. I worked out the secret to getting them to hold together in a perfect shape – I used a cookie cutter – put it on the tray and pushed the mixture into the shape then lifted the cutter off. I now have a tray full of perfect heart shaped bites.

Mine looked more like pancakes. I added almond meal to mine because my son has been eating too many grains lately. I also used flax meal in place of the egg because of his egg allergy. He loved them!
