Add the onion and apple and fry till softened and caramelized (approx 10 mins)
Sets aside to cool.
Once cooled, at the mixture to the ground pork, along with the thyme and maple syrup, and season
Preheat oven to 200c/400f (gas mark 6)
Whisk the egg in a bowl and set aside.
Place one sheet of pastry on a flat surface and using half of the mixture make a long sausage along the middle. Then roll the pastry around it. Slice into approx 10 mini sausage rolls and place on a baking tray lined with parchment.
Repeat with the second sheet.
Brush over the top with beaten egg
Bake in the oven for approx 20 mins until golden

These are perfect for freezing.
You can either freeze cooked or freeze uncooked and then cook from frozen.
