Bring to a boil and then allow to simmer covered, stirring occasionally until the plums break down into more of a sauce consistency
Add the lime juice and maple syrup and continue to simmer until sauce reduces down and thickens. (about 20 mins in total, from first adding plums to saucepan)
Set aside to cool, and then refrigerate.
Chai Pudding
Add all ingredients for the chai pudding to a bowl and mix well to combine.
Place in a tub and refrigerate until overnight to thicken.
Serve chai pudding topped with some plum sauce and shredded coconut
