My kids have a huge aversion to green foods. There are only few green food items they will eat. So I am always coming up with inventive ways to encourage them to try more.
Most kids love pancakes, right? So I wondered if I could perhaps incorporate green in a fun way for my kids. Kind of like the famous Dr Seuss book – Green Eggs and Ham.
These turned out really well and the kids loved them. I just served them with a simple knob of butter and some maple syrup. But they would be great with some fruit too.
These are also gluten free if you use gluten free oats, so great if anyone in your family has a gluten intolerance.
Green Pancakes
Ingredients
- 1/4 cup /60ml of oats, can use gluten free
- 1 small ripe banana
- 1 egg
- handful of spinach
- 1 tbs of coconut milk
- 1/4 tsp of baking powder
Instructions
- Add the oats to a food processor and blitz until fine.
- Add the baking powder and mix to combine
- Add the banana, egg, spinach and coconut milk to a blender and blend till smooth.
- Fold the mixture into the oats until all combined
- Heat a skillet over a medium heat, grease with oil of choice
- And ladle the batter to desired pancake side.
- As little bubble begin to appear on the top carefully flip over.
- Serve with your choice of sides.
Notes
These are dairy free, when omitting the butter on top.

I just want to say I can’t thank you enough for your recipes. My son is a very fussy eater who doesn’t like any meat, fish or egg so I have struggled to make sure he get enough protein and iron fron his food. However he loves the green pancakes and the Apple and cheddar quinoa bites which have ingredients that are high in iron and protein. He also likes the squash mac and cheese and the spinach and feta muffin. It’s amazing considering how fussy he is ( Refused all homemade Annabel Karmel meals). So once again thank you so much!
