Mini Banana and Raisin Muffins

These little muffins have no added sugar, they are sweetened naturally with the added banana and raisins, so are great for baby led weaning or for adding to your kids lunch box as a snack. I make them using a mini muffin pan, but you could make these into larger muffins if you prefer.

Mini Banana and Raisin Muffins

Makes 18 mini muffins

Ingredients

  • 1 cup of all purpose flour (you can use half white, half wholewheat)
  • 1 tsp of baking powder
  • 1/4 tsp of baking soda
  • 1/2 tsp of all spice
  • 2 ripe bananas, mashed
  • 4 tbs of unsalted butter, softened
  • 1 egg, beaten
  • 2 tablespoons of whole milk
  • 30g of raisins

Directions

Preheat oven to 190c or 375f (gas mark 5)

Grease a mini muffin tray

Sieve the flour, baking powder, baking soda and all spice into a bowl.

Add the butter and mashed banana to a separate bowl and whisk till smooth. Gradually mix in the beaten egg.

Fold in the flour mixture

Add the milk and raisins and then add batter mixture to your muffin pan.

Bake in the oven for approx 20 mins, until golden. Remove to a wire rack and allow to cool.

My mini muffin tray holds 12 mini muffins, so I baked mine in two batches.

    Can I check the measurement for the butter – is it 4 tablespoons? Thank you!

    Made these for my daughter, 10 mths. She didn’t seem hugely interested, but never-mind, her loss, mummy’s gain! 😉 I split mine in half and spread marscapone on them – delicious.

    I added 4 tbspn of peanut butter to the recipe. Partly because I thought banana and peanut butter would go together well and partly to sneak some extra calories into my teeny baby. TBH, I’m not that sold on the peanut butter flavour – might try almond butter next time.

    I had a job getting my butter and bananas to whisk to a smooth texture. Possibly I should have creamed my butter first to soften it, then gradually added the bananas.

    UK readers: All purpose flour is plain flour.

      I made them with half a cup of coconut flour and half a cup of gluten free flour and they are delicious,also added some real vanilla essence .

    My daughter loved them, I topped them with almond butter. I should have pulled them from the oven at 16 minutes.

    Quick question, could I try blueberries instead of sultanas? Would I omit cinnamon? Such a yummy recipe I’d love a few variations.

      I think blueberries will work fine, cinnamon goes quite well with blueberries so you could still add that, or maybe some lemon zest would compliment well too. Let me know how they turn out 🙂

        It was delicious! Used 1/3 cup frozen blueberries. I’m going to try dates next time. Such a hit with my friend and all our kids (7M, 2, 3, 4 & 6) & our husbands at a picnic yesterday.
