One of my favorite sandwiches I used to order at a favorite little pub of mine back in Ireland years and years ago was a Tuna Cheddar Soda Bread melt. It was delicious in every single way, pure heaven on bread. Unfortunately I didn’t have any soda bread today. I suppose I could of made some, but I shall leave that for another day. These little mini bites I did on whole wheat bread and I have to say they did work just as well. My kids loved them. I mean what kid wouldn’t? Okay! maybe one that will not eat fish, but saying that my eldest is not hugely keen on some fish and he devoured these.
Mini Tuna Cheddar Melts
Serves 2 Children
Ingredients
- 1 small 170g tin of tuna
- 3 heaped tablespoons of mayonnaise
- 2 slices of whole wheat bread toasted
- black pepper
- 1 spring onion, finely sliced
- unsalted butter
- grated cheddar
Directions
Preheat oven to 200c or 400f (gas mark 6)
Using a 48mm cookie cutter, cut out 8 circles in the toasted bread.
Lightly spread each circle with some butter and place the on a baking tray.
Drain the tin of tuna and then add the mayo and a little black pepper and mix until ingredients are well combined and any big lumps of tuna are broken up.
Spoon a little bit of the tuna mix onto each circle and flatten down, then top with a little grated cheddar.
Place in the oven and bake until cheddar is melted. Top with some sliced spring onion.
With the rest of the tuna, you can make an adult sized tuna cheddar melt sandwich.
