This is a yummy dish filled with healthy grains, that your little one will enjoy. Just mix up about 1 cup of brown rice, 1 cup of kamut, 1 cup of spelt and 1 cup of barley and keep it in a container, or jar to use in place of your normal rice when needed. My little one loved this pilaf, infact she didnt leave a single grain. I put it in a little suction bowl for her and she scooped it out with her hands and ate the lot.
Mixed Vegetable and 4 Grain Pilaf
Serves 3 (1 adult and 2 kids)
Ingredients
1/2 cup of your 4 grain mix.
2 cups (480ml) of no salt chicken stock
1 onion, finely chopped
2 cloves of garlic, crushed
3 baby portobello mushrooms, finely chopped
1 courgette, finely chopped
1 leek, chopped
1 carrot, chopped
30g of sultanas
2 teaspoons of ground cumin
2 teaspoons of ground coriander
1 teaspoon of turmeric
2 bay leafs
Olive oil
Fresh coriander
Method
Add some olive oil to a large saucepan over a medium high heat and add your onion and garlic, fry until softened and lightly golden.
Add your leek, carrot, courgette and mushrooms and fry for a further 5 mins.
Add the ground cumin, ground coriander, turmeric and sultanas and stir to evenly coat.
Pour in the stock and add the bay leaves. Bring to a boil and then reduce heat to low, cover and simmer until all stock is absorbed and grains are cooked.
Top with some freshly chopped Coriander
