What kid doesn’t like cheesy potatoes? This is great as a side to many meat/fish dishes and stews and casseroles.
Potato Gratin
Serves 6
Ingredients
- 1 garlic clove
- 1kg of potatoes (I used russets), peeled and sliced thinly
- 120g of parmesan
- 600ml of no added salt chicken stock
- black pepper to season
- no added salt butter
Method
Preheat the oven to 200c or 400f
grease an oven proof dish with a little butter.
Chop the garlic clove in half and rub over the base and sides of a oven proof dish.
Arrange half the potatoes in the dish, slightly overlapping as you do. Sprinkle with a half of the parmesan cheese and season with a little black pepper. Pour over half of the stock. Finely chopped the other half of the garlic clove and add this to the top of the potatoes.
Repeat with remaining potatoes and cheese.
Bake in the oven for approx 1 hour, top should be nice and golden.
