Spinach Pasta Bake

I have been cooking with spinach a lot recently. The reason being that I have discovered my 5 year old actually likes it. It has been a huge battle for years to get him to eat some healthy greens, but apart from peas he was having none of it. So it was great to see him tucking into this for dinner. It is so quick to make too, if you have a batch of my homemade tomato sauce already done.

Spinach Pasta Bake

Serve 4 (2 adults and 2 kids)

Ingredients

  • 320g of rigatoni pasta (or similar), uncooked
  • couple of handfuls of baby spinach
  • 80g of Havarti Cheese
  • 400ml of homemade pasta sauce (click link)
  • Directions

    Preheat oven to 200c or 400f (gas mark 6)

    Add the pasta to a saucepan of boiling hot water and cook until al dente.

    Drain and Stir in the sauce.

    Add to an oven proof dish and scatter with some baby spinach. Mix loosely.

    Top with the cheese (I add broken up pieces)  and bake in to oven until cheese has melted on top and is nice and golden.

    Serve and Enjoy!!!

    The size of the rigatoni pasta is great for little hands and so FAB for Baby Led Weaning

    and here is the proof that both my kids LOVED this 🙂
