What’s in my lunch box?

For today’s lunch I saved some leftover rice from the night before, so I could quickly throw together some egg fried rice to go in the yumbox’s today (I’ll get a full recipe up soon), for this I drizzled a hot pan with a little avocado oil, added the rice, some coconut aminos (you can use soy sauce), frozen peas and corn and heated it all up. Then I made  a well in the middle, cracked in a couple of whisked eggs and allowed it to cook like an omelette and then added a little sesame oil and mixed it all up. My daughter then asked if she could have some chocolate on her strawberries, so I melted a little dark chocolate in the microwave and drizzled it over some chopped strawberries I put on a little wooden skewer, super cute and very quick. This was all thrown together in about 10 mins. The key is just getting something prepared the night before to save a bit of time in the morning.

So today’s lunch:

  • Egg fried rice
  • Ham roll up
  • Apple slices
  • Dark chocolate drizzled strawberries
  • Penguin crackers with cheddar
  • Penguin fruit bites

I also always add a refillable  water bottle
