I try to have what I am going to put in the kids lunch boxes planned the night before, that way I can quickly make up something if I don’t have a good source of protein already made up for them. Last night I decided to throw together some mini crustless quiches, they are so quick to put together. I just whisk about 4 eggs with some 1/4 cup of full fat coconut milk. Add in some meat of choice, a little grated cheese, black pepper and some peas (you can add any kind of veg you like really), pour this into a greased muffin tray and bake at 180c or 350f (gas mark 4) for about 30 mins, they should be lightly golden. Then they can just go in lunch boxes cold the next day. My daughter loved them, she wasn’t at school again today, as she still has quite a nasty rash from the fifth disease, but she devoured about 4 or 5 of these for lunch.
In my son’s lunch box was the following:
- 2 mini crustless quiches
- yoghurt with dark chocolate chips
- apple slices
- veggie chips
- Little Penguin fruit bites
