My son asked to do some baking today and as I had a big bag of apples lurking in my kitchen. I decided to put together some Apple and Blueberry muffins. I did add a little bit of a sugar/cinnamon crust to these, so if making for your little ones, then you can omit this, there is plenty of fruit in them, so would probably be sweet enough without.
Apple and Blueberry Muffins
makes 12 muffins
Ingredients
2 cups of all purpose flour
1 tablespoon of baking powder
1 apple, peeled and chopped
1 cup of blueberries
2 eggs
1 cup of plain yoghurt
1/3 cup of vegetable oil
1 tsp vanilla extract
topping (optional):
1/4 cup of brown sugar
1 tsp of cinnamon
Directions
Preheat oven to 200c or 400f (gas mark 6)
Sift the flour and baking powder into a bowl.
In a separate bowl, beat the eggs and gradually whisk in the yoghurt, oil and vanilla essence
Add this into the flour and mix to combine. Fold in the apple pieces and blueberries and then spoon into 12 muffin cases.
In a small bowl mix together the brown sugar and cinnamon and sprinkle on top.
Bake in the oven for approx 20 mins. A wooden skewer entered through the centre should come out clean.
Allow to cool in muffin tray and then transfer to a wired rack

Hi there, I liked this recipe however I did adapt it slightly…it’s been hard to find an actual sugar-free muffin recipe for Miss I-will-feed-myself. I used wholemeal flour, left out the vanilla and added frozen berries as well as the apple. I also left off the sugar top. Thanks!
