Apple and Sultana Pancakes

I realised yesterday it had been a while since I made my little one some pancakes, so decided to put together these ones this morning, and she really loved them. I had plenty left over too which I freezed for another day, they will come in handy if I need a snack for her quickly. My eldest was at school, so he didnt get to try any, maybe he will have some tomorrow for breakfast.

Apple and Sultana Pancakes

Makes approx 10 pancakes

Ingredients

  • 1 cup of all purpose flour
  • 1 tsp of baking powder
  • 1/2 tsp of baking soda
  • 1/2 teaspoon of cinnamon
  • 1/4 teaspoon of allspice
  • 2 teaspoons of light brown sugar (optional)
  • 1/3 cup of unsweetened apple sauce or you could use chunks of steamed apple
  • 1/2 cup of sultanas
  • 1 egg
  • 3/4 cup of milk
  • oil for cooking

Directions

Add the flour, baking powder, baking soda, cinnamon, all spice and sugar to a large jug.

Add the egg,  apple sauce and then gradually add the milk, mixing as you do. Your batter should be well combined, but still a little lumpy. If your mixture is still too thick just add a little more milk.

Stir in the sultanas

Drizzle a frying pan or skillet over a medium high heat with some oil and add a couple of dessert spoons of the mix per pancake.

Flip over, cooking both sides until lightly golden. Repeat process with remaining batter.

    What would you suggest to use instead of allspice? I live in Croatia and can’t find it anyplace 🙁

      all spice is a mixture of cinnamon, nutmeg, cloves, so if you have those you could just use a tiny bit of each, you really do not need much.

        Allspice is actually a spice on its own that somehow has all the flavours of cinnamon, nutmeg and cloves

    Hi there, could I use whole wheat or ground oats instead of all purpose flour?

      I haven’t tested this with those ingredients, so couldn’t say how well it would work. Do let me now if you give it a try.
