Golden Courgette Pilaf

This simple rice pilaf is great on it’s own or as a side to your main. It is also a great way of sneaking some  vegetables into your fussy ones. If you chop the veg finely, most will never know it is even there.

Golden Courgette Pilaf

Serves 4 (2 adults and 2 kids)

Ingredients

  • 3/4 cup of brown rice
  • 1 large golden courgette/zucchini, finely chopped
  • 1 onion, finely chopped
  • 1 clove of garlic, crushed
  • 2 cups (480ml) of no salt chicken stock
  • Frylight or Pam spray
  • 1 teaspoon of turmeric
  • fresh chopped coriander

Directions

Add some olive oil to a large saucepan over a medium high heat.

Add the onion, garlic and courgette and fry for about 5 mins to soften.

Add the  rice and turmeric and mix well, continue to fry for about 2 mins, until rice goes slightly translucent.

Reduce heat, cover and simmer until stock is absorbed.

Remove from heat and set aside for 10 mins or so, but leave covered as the steam will continue to cook the rice.

Top with some fresh chopped coriander

Enjoy!!
