I was wondering what to make my youngest for lunch yesterday, as I was having homemade crab cakes and wasn’t sure how she would take to those, she actually loved them, so she had some crab cake and a couple of these mini chickpea patties. They are quite yummy served with a dip of your choice.
Mini Chickpea Patties
Ingredients
- 1 400g tin of no added salt chick peas, drained
- 1 tablespoon of olive oil
- 1 onion, finely chopped
- 1 clove of garlic, crushed
- 1/3 cup of passata
- couple of torn up basil leaves
- breadcrumbs (I used blitzed toasted whole wheat bread)
Directions
Add the olive oil to a saucepan over a medium high heat along with the onion and garlic and fry until lightly golden and softened.
Add the chickpeas, passata, and basil leaves and bring to a boil until passata has simmered down.
Add mixture to a food processor and blitz a few times until you have a smooth mixture. Do no over blitz though, as mixture will become too wet.
Preheat oven to 200c or 400f (gas mark 6)
Form into patties and then add to the breadcrumbs to coat.
Grease a baking tray with oil and add the patties to the tray.
Bake in the oven until lightly golden all over.(you can shallow fry them in some oil if you prefer)
