I was cooking some stuffed courgettes recently, and an idea popped into my head about using slices of courgette/zucchini as the base for mini pizzas for my little one. It seems many others have had the same idea too and I am not surprised, they work and are so quick and easy to make, they also taste really yummy and best of all I got my fussy oldest to try one and he ate it!!
Mini Courgette Pizzas
Serves 2 Children
Ingredients
- 1 courgette/zucchini
- homemade sauce
- mozzarella cheese
- olive oil
Directions
Slice your courgette/zucchini, you don’t want the slices too thick or too thin.
Preheat oven to 180c or 400f
Place a grill pan over a medium high heat and brush with some olive oil. Place the courgette/slices onto the grill pan and grill for a couple of mins each side.
Place the courgette/zucchini slices onto a baking tray and spread the top with a little of the homemade sauce and then top with some grated mozzarella.
Place in the tray in the oven and bake until cheese is golden and melted on top.
Allow to cool down before serving to your little ones.
do these freeze ok?
I personally haven’t tried, but I don’t see why not, the only problem you might have is that they become very watery when defrosted.
