These are everything my little one loves made into mini burgers. They are really yummy and you can make the mixture into bigger burgers for the adults. So these work great for the entire family.
Red Pesto, Sweet Potato and Tuna Burgers
Makes 4 adult sized burgers and 6 mini burgers
Ingredients
- 400g sweet potato
- 340g tin of tuna in water, drained
- 2 tablespoons of red pesto
- 1 small onion, finely chopped
- half a red pepper, finely chopped
- 1/4 cup of frozen sweetcorn
- 1/4 cup of frozen peas
- 1 egg
- 70g of whole wheat bread, blitzed into breadcrumbs
- oil for cooking
Directions
Place sweet potato in a steamer above some boiling hot water and steam until softened. Set aside to cool.
Drizzle a frying pan with a little oil over a medium high heat and add your onion and red pepper and fry until softened.
Add the sweet potato, tuna, onion, red pepper, pesto and egg to a large bowl and thoroughly mix all ingredients together.
Add the sweetcorn and peas and mix to combine.
Form into your burgers and place in the breadcrumbs to coat. Place in the fridge for a couple of hours to firm.
Heat some oil in a frying pan over a medium high heat. Add your burgers a couple add a time and cook each side until golden.
Serve topped with a little mayonnaise.
These are great in burger buns too with some salad and cheese.
