Pear and Apple in Vanilla Coconut Milk

I wanted to make something sweet for my youngest to have after her dinner, as she has been getting a little bored of yoghurt and plain old fruit. Looking in my fridge I had some coconut milk that need to be used, so I had any idea to poach some pear and apple in it with a little vanilla and it was a big hit. She loved it.

Pear and Apple in Vanilla Coconut Milk

Makes approx 3 servings for a little one.

Ingredients

  • 1 apple, peeled and chopped
  • 1 pear, peel and chopped
  • 1 vanilla pod.
  • 1 cup (240ml) of so delicious coconut milk
  • 2 teaspoons of cornflour

Directions

Place pear and apple in a small saucepan, cover with the coconut milk.

Cut the vanilla pod in half and scrap a few of the seeds out  and add this to the saucepan.

Mix the cornflour with a little water to make a paste, add this into the saucepan and bring to a slow boil, until fruit is softened and coconut milk has slightly thickened.

Allow to cool and serve.
