I bought a bread maker not long after my little one was born, as I was conscious of the amount of salt and other shocking ingredients that are found in shop bought bread. Usually we just make a 100% whole wheat loaf with the occasional loaf with fruit or some kind of vegetables in it. I hate some dates and pecans that needed to be used up and so decided to combine them all in the ingredients for a loaf and omg was it good. My little one loved it too. It is not suitable or under 1’s because of the honey content, but if you really want to try this for them, you could perhaps substitute the honey with a little brown sugar.
Pecan and Date Bread
Makes a 1.5lb loaf (only suitable for over 1 year olds because recipe contains honey)
Ingredients
- 1 1/4 of luke warm water
- 3 tablespoons of honey
- 2 tablespoons of vegetable oil
- 2 cups of all purpose flour
- 1 2/3 cups of whole wheat flour
- 1 1/2 tsp of bread machine yeast
- 2/3 cup of dates, finely chopped
- 1/4 cup of pecans, finely chopped
Directions
Add the ingredients to the bread machine in the order listed (apart from the dates and pecans)
Set machine to a basic cycle, 1.5lb loaf (I chose medium browning)
Add the pecans and dates at the add ingredients cycle
Once cooking is complete, remove from bread machine, allow to cool for about 15 mins and serve with your choice of spread.
I have to say though, this is fab just spread with a little butter.
