This pasta bake is great for both baby led weaning and fussy eaters. The homemade sauce used in this, has lots of hidden veggies as well as the added leeks (which you can always leave out if your little one hates the green stuff). My son doesnt like leeks, so when making this up for the whole family, I make sure one section of the dish has no leeks in sight.
Salmon and Leek Pasta Bake
Serves 4 (2 adults and 2 kids)
Ingredients
- 320g of uncooked pasta (I used rigatoni)
- 400g fresh salmon fillet (uncooked), sliced into smaller pieces
- 2 large leeks, sliced
- 500ml of pasta sauce (check link)
- 15 grape tomatoes, halved
- 100g of parmesan cheese
- black pepper
- 2 teaspoons of unsalted butter
Directions
Preheat oven to 180c or 350f (gas mark 4)
Add pasta to a saucepan of boiling hot water and cook till al dente. Drain water and set aside
Add the butter to a frying pan over a medium high heat, once melted add the leeks and cook until softened.
Mix the sauce with the pasta and add to an oven proof dish.
Scatter the leeks and grape tomatoes
Add the salmon and push down into the pasta
Top with the Parmesan and a sprinkle of black pepper
Place in the oven and bake for approx 20 mins, until cheese has melted and salmon is cooked through.
