Spinach and Feta Frittata

My eldest wouldn’t touch this, it has too much green stuff in it for him. But my youngest loved it. She so far seems to love spinach and especially anything with eggs.

Spinach and Feta Frittata

Serves 5 (3 adults and 2 kids)

Ingredients

  • 8 cups of fresh spinach
  • 1 onion, halved and sliced
  • 1 clove of garlic, crushed
  • 6 eggs
  • 60ml of whole milk
  • 80g of Feta cheese, crumbled
  • black pepper
  • Olive Oil

Method

Preheat oven to 180c or 350f (gas mark 4).
Line a square deep baking dish (approx 20x20cm) with some parchment paper and add half the feta cheese.

Add a little olive oil to a frying pan over a medium high heat  add your onion and garlic, fry until golden.

Add a few cups of the spinach at a time, and when it is slightly wilted add some more and keep doing so, until you have add all the cups of spinach.

Add the spinach, onion and garlic to the feta cheese in the tray.

Add the remaining feta cheese.

Add the eggs to a bowl, and beat with a little black pepper.

Pour over the top off the feta spinach mixture.

Bake in the oven for approx 30 mins, until egg mixture is set and slightly golden on top.
