Turkey, Cranberry and Bulgur Wheat Bites

These are yummy served on their own or with a dipping sauce of your choice. My kids LOVED them

Turkey, Cranberry and Bulgur Wheat Bites

Makes 24 Bites

Ingredients

  • 450g of turkey mince
  • 1/2 cup of bulgur wheat
  • 1/2 cup of dried cranberry, finely chopped up
  • 1 apple, peeled and grated
  • 1 onion, very finely chopped
  • 2 cloves of garlic crushed
  • handful of fresh sage leaves, finely chopped
  • 1 egg, beaten
  • black pepper
  • olive oil

Directions

Place the bulgur wheat in a bowl, cover with double amount in water and leave for approx 30 mins to soak and expand. Drain and set aside.

Preheat oven to 180c or 350f (gas mark 4)

Add a drizzle of olive oil to a frying pan over a medium high heat and fry the onion and garlic to soften. Remove and set aside to cool.

In a large bowl, add the turkey mince, bulgur wheat, apple, dried cranberry, fresh sage,t hen the onion/garlic and some black pepper and thoroughly mix and bind together.

Mix in the beaten egg and then form into approx 24 equal sized bites.

Place on a greased baking tray and brush over the top with some olive oil.

Bake in the oven for approx 30 mins, until lightly golden.
