Easy Make Almond Butter Cookies
Gotta love a fresh batch of homemade cookies, especially chunky crumbly ones like these Almond Butter Cookies that use just a handful of easy ingredients and are super quick to make for even the novice of bakers.
My kids love nut butters – give them some peanut butter or almond butter and they in heaven. Usually spread over some thick buttered toast or warmed as a dipping sauce for some freshly sliced apples.
So when they got home from school to a tray of these warm out of the oven with a glass of ice cold milk, they couldn’t wait to dunk and nibble away.
Best of all, the adults (me) love them. In fact, I had to pop the leftovers in the freezer, just to stop me from sneaking another one out of the tub to nibble on.
Almond Butter Cookies – Ingredients
The beauty of these yummy cookies is that they are both gluten and dairy free, so great for kids or a family with intolerances.
I normally have a gluten free flour blend on hand and while we are not a gluten free family. I have plenty of friends who are, so it’s good to have a tasty cookie recipe like this one hand.
For these cookies I used the Bob Mills Gluten Free All Purpose Baking Flour, as well as that goes in a little Xanthan Gum, it just helps to replace the elasticity of the gluten which of course is not in this recipe. Some gluten free flours already have it, so if you are using a different flour to the one I used, you may want to skip the Xanthan Gum.
To replace the butter in a traditional cookie recipe like this, I use coconut oil. It’s perfect for baked goods as its firm when cold and softens when warmed.
Then of course there is just the usual ingredients like egg, sugar and of lastly the most important ingredient of all – Almond Butter.
For extra flavour, I just add in a little vanilla and cinnamon, totally optional, but the cinnamon definitely pairs really well with almond butter.
NOTE: I haven’t yet tested these with a flax egg, to see if these would work without egg.

Almond Butter Cookies (Gluten Free and Dairy Free)
Almond Butter Cookies - these delicious crumbly almond butter cookies are perfect for little hands and great with a glass of milk for dunking.
Ingredients
- 1/2 cup of coconut oil
- 1/2 cup of natural almond butter
- 1/3 cup of brown sugar
- 1 tsp of vanilla extract
- 1 egg
- 1.25 cups of gluten free flour
- 1 tsp of xanthan gum (only if gluten-free flour does not contain this)
- 1/2 tsp of baking soda
- 1/4 tsp of cinnamon
- pinch of salt
Instructions
- Preheat oven ot 190c/fan 170c/375f or gas mark 5
- In a bowl cream together the almond butter, coconut oil and brown sugar
- Add in the egg and vanilla and whisk till combined
- Combine together the gluten free flour, xanthan gum, baking soda, salt and cinnamon
- Gradually add this in the almond butter mix until all combined.
- Form into 24 balls.
- Place well spaced apart on a parchment lined baking tray (you may need to do in two batches if tray is not large enough)
- Then squash down each ball with a fork
- Bake in the oven for approx 12-14 minutes until lightly golden.
- Let cool slightly and Enjoy!!
Notes
This recipe is gluten free and dairy free
*suitable for freezing
Variation: try adding in some chopped dry fruit or dairy free chocolate chips
