I am often trying to create healthier snacks for my little ones, that can be created quickly with limited ingredients and so when I had some peanut butter that I wanted to get used up, I figured what better way to use it, than as a healthy snack for the kids.
First let me say, my kids love Rice Krispies, it’s that whole snap, crackle and pop thing they have going on, and the fact we recently used some to make some yummy Chocolate Easter Egg Nests.
My kids are not huge cereal eaters and there is only a few they will eat, Rice Krispies being one of them, then occasionally they will have oatmeal or cornflakes and one thing I have come to realize, is that they love their cereal with warm milk, just like I did as a child.
There main breakfast food of choice is usually eggs of some kind – preferably boiled or scrambled. Boiled eggs were one of the firs things my son learnt to make on his own, and he has pretty much for the timing perfect for a soft boiled egg – just how he likes it.
Today I had about 30 minutes before the kids were due home from school and knew they would be hungry for some kind of snack. So figured it would be a good time to test out a new recipe.
I melted a little natural peanut butter in the microwave, stirred in some Rice Krispies, a little maple syrup and some chocolate chips, rolled into little bites, then placed on a tray lined with parchment paper and Popped in the freezer until the kids came home, just to firm them up.
To say these No Bake Peanut Butter Chocolate Chip Rice Krispie Bites were a hit, is an understatement, they were literally gone as soon as the tray came out of the freezer, my dad visiting from Scotland enjoyed a few too.
My youngest one loves peanut butter and straight away asked if I would make some more. So these are going to be perfect for quick snacks for the kids and adults too.

No Bake Peanut Butter Chocolate Chip Rice Krispie Bites
This recipe is egg free, and vegetarian friendly
Ingredients
- 1/2 cup natural peanut butter
- 1.5 cups Rice Krispies
- 2 tbs maple syrup
- 3 tbs milk chocolate chips
Instructions
- Place peanut butter in a bowl and microwave at 10 sec intervals until runny.
- Add to a bowl with Rice Krispies, maple syrup and chocolate chips and mix till all combined.
- Roll into balls of desired size, place on a baking tray lined with parchment paper and pop in the freezer until firm.
