I wanted to try and make some cookies that my daughter could enjoy that wasn’t high on sugar. These actually turned out quite nice, they reminded me a bit of a molasses type cookie and my daughter certainly enjoyed them. The only thing I might do differently next time, is add some dried fruit pieces too (perhaps sultanas or similar)
Date Cookies
Makes 18 cookies
Ingredients
- 1 cup of all purpose flour
- 1/2 tsp of all spice
- 1/2 cup of unsalted butter
- 3/4 cup of pitted dates
- 2 tablespoons of fresh pineapple juice
- 1 egg yolk. beaten
Directions
Sieve the flour and all spice into a large bowl.
Add the butter, pineapple juice and dates to a small saucepan and heat until butter is melted and just starts bubbling. (you need the dates to slightly softened from the heat) Then using a hand blender, blend until you have a smooth paste with small piece of dates.
Allow mixture to cool and then add the egg and whisk until smooth.
Add this to the flour and mix to a dough. Roll into a log and then wrap in cling film and refrigerate until firm.
Remove from refrigerator, preheat oven to 190c or 375f (gas mark 5)
Slice dough into 6mm slices. Place on a baking tray and bake in the oven for approx 10 mins until golden.
Remove to a wire rack to cool.

Hi there – I made a batch of these cookies today. I didn’t have any unsalted butter so I used margarine instead. They are yummy but not very crunchy. Are they suppose to be soft like mini cakes?

no they should be like a biscuit. I can only assume it was the margarine.

Can you freeze these biscuits? As want to make a batch but if we ate them fresh we’d be constantly eating biscuits for a couple of days. I’d like to freeze 2/3 in some cling film and take them out as and when we want them, is that possible?
