This was a huge hit with my daughter, she loved the white fish and ate two big fish fingers to herself. It was easy to make too.
Fish and Chips
Serves 4 (2 adults and 2 kids)
Ingredients
- 600g of white fish of your choice (cut into two equal sized fillets and 4 pieces, finger sized)
- 150g of whole wheat bread, lightly toasted
- black pepper
- couple of handfuls of fresh parsley
- 2 teaspoons of chilli powder
- 2 eggs, beaten
- plain flour
- 600g of potatoes, peel and cut into thick chip shapes
- olive oil
Directions
Preheat oven to 200c or 400f (gas mark 6)
Parboil the potatoes for approx 5 mins. Toss them in olive oil and place on a baking tray.
Add to the oven and leave these cooking for approx 20 mins before adding your fish, as the chips will take longer.
Once bread is cooled from lightly toasting, add it to a food processor, along with the parsley, chilli powder and a little pepper and blitz until it resembles bread crumbs.
Using one hand, dip the fish pieces into some flour, then the egg and then drop into the breadcrumbs and cover over with the breadcrumbs using your other hand. Place on a greased baking tray.
Place in the oven along with your chips. Carefully turn over the fish with a spatula half way through cooking time. Cooking time for the fish is approx 20 mins.
Serve with peas. (My kids love these)
