Sweetcorn and Cheddar Fritters

I was stuck with something to cook my youngest for lunch, my eldest was at summer camp for the day and  I was having some left over curry which was a little bit too spicy for her. So I whipped this up pretty quickly and she loved them.

Sweetcorn and Cheddar Fritters

Makes approx 6 patties

Ingredients

  • 50g of all purpose flour
  • 1 egg
  • 1/2 tsp of baking powder
  • little sprinkle of paprika and nutmeg
  • 1/2 cup of sweetcorn
  • 2 spring onions, finely chopped
  • 50g of cheddar, grated
  • Milk
  • olive oil and a little unsalted butter

Directions

In a bowl whisk together the flour and egg.

Add your sweetcorn, paprika, nutmeg, cheddar and spring onion.

Then start adding your milk a little at a time until you have a thick batter.

Drizzle a little bit of olive oil into a skillet over a medium high heat and also add a knob of butter.

Add a few spoonfuls of the batter at a time, flip over so that both sides are lightly golden (as you would a pancake).

Repeat with the remaining batter.

Great served on their own, or you can serve them drizzled with some of my Homemade Tomato Sauce

    I was interested why you measured your flour in grams? I’m trying to fig out what it would be in reg teaspoons/tablespoons/cups.

      I am originally from Britain, so still have some British habits and can’t get out of the weighing some things, even though I have switched to using spoons/cup measurements for many things too.

    Thank you for this neat little recipe! I have made it several times now for my little one and she LOOOOVES it! I have to say that I find them pretty yummy too 😉 I liken them to a baby version of a Japanese okonomiyaki.

    Just one small thing – baking powder is listed in the ingredients but not in the recipe itself. I assume it goes in with the flour and egg in step one, so that’s when I’ve been adding it. You might want to update the post? Cheers!
