Last night I put together these yummy mini banana and pear breads to use in their lunches today. I was originally going to just make my usual banana muffins that I always tend to throw together when I have some over ripe banana’s to use up, but thought I would have a go at something else, as the only flour I had on hand was some 12 grain flour. The mini breads are great cut in half and topped with butter or some kind of spread. The taste resembles a sweet Irish soda bread, if you have ever been lucky to try it.
In today’s lunch:
- Paprika Chicken
- Homemade 12 Grain Banana and Pear bread muffins
- Sugar snap peas and cucumber
- Sweet Potato and Beetroot chips
- Lemon curd
